Avocado Mashed Potatoes

Can we talk about how wonderful avocados are?

I was sitting on Manhattan Beach alone a few months ago, on a blanket, eating Trader Joe’s guacamole and lime tortilla chips. I wolfed it down and when it was gone I felt like the smears on the bottom of the container were going to waste, so I said fuck it and licked it clean.

Then I realized how close to the pier I was and felt grateful that I’m not a celebrity and can actually get away with these things because if I were anyone of relevance it would be all over the tabloids and probably super revolting to look at. I still wonder if any binocular-toting tourists saw me. You’re welcome, boys!

I found this recipe for avocado mashed potatoes on google and had to try it out. Starch, avocado, sriracha? SHUT IT DOWN!

Boil and mash a potato, mash in an avocado, add 1/2 teaspoon each of sea salt, pepper, garlic powder and sriracha sauce, and sprinkle some parmesan on top. You could also add caramelized onions and sour cream like they did, but I just sprinkled some parm on top instead. I know my directions totally suck but like, just mix it all together until it’s at the right consistency. I used one yukon gold potato and one small avocado and it turned out absolutely perfect. So smooth and silky. Experiment, get crazy, do your own thing. It’s is a heavenly snack or side dish with that will fill you up and make your skin pretty.

And yea, I was afraid of the kitchen for a few days after my rice pudding catastrophe. This gives me hope
